Valentine’s dinner!

Red Thai curry paste with Greek yoghurt, broccoli stalks, carrot, red capsicum, green beans, mushroom and baby bok choy served on jasmine rice with boiled egg. 

Gluten-free pasta spirals with broccoli, mushroom, zucchini, green beans and eggplant cooked in tomato & ricotta sauce with a hint of black pepper.

Vermicelli rice noodles with carrot, baby bok choy, red capsicum, firm tofu, green beans, celery and mushroom cooked with black bean sauce (gluten free variety) and a small splash of oil. 

Oven roasted portobello mushroom stuffed with a mixture of kale, eggplant, zucchini, cayenne pepper and tomato-ricotta cooking sauce. 
Sitting on half a potato, boiled and mashed with a dash of milk and a sprinkle of black pepper. 

I also ended up serving it with light cheddar cheese melted over the top. 

Perfection. 

I’m back again!

Long time no post, but I hope to start this blog back up again. 
I’ve developed a sensitivity to wheat, so a lot of my meals now contain gluten-free products (which I will tag accordingly), although I do slip up now and again! Whoops!
And I also want to point out that this blog is not about dieting or calorie counting; it’s promoting the healthy way of life and trying to give your body all the nutrients and goodies it needs whilst being vegetarian.

Lebanese bread, diced tomatoes, mushrooms, green capsicum, Sanitarium crumbed soy cutlet, baby spinach, cheddar cheese and stuffed green olives oven baked at 180’C

Oven roasted zucchini and eggplant slices covered in diced tomatoes, mushrooms, baby spinach and cheddar cheese. 
Served with a side of oven roasted green beans, red capsicum and (pre-boiled) potatoes. 

Penne, broccoli, carrot, mushrooms, baby spinach, green beans, red capsicum, zucchini and tofu cooked in a small amount of mushroom pasta sauce and black pepper.

So incredibly tasty!
The vine leaves ($4 for a huge bag), hummus ($1 for 350g) and bread ($1 for 5) were purchased at my local Middle Eastern bizarre. Always check out small local businesses, particularly in lower socio-economic areas, as you can find so many delicious food bargains.
